But be careful of restaurants that add chemical preservatives to food. Sugar is routinely added to many Thai dishes too. Sugar diabetes is a problem in Thailand.
Street vendors are often safer to buy from.

Restaurants have been known to purchase from a street seller and re-plate for their customer — at up to ten times the price.

For home cooking, we buy from a stall where the owner uses no chemicals. She always wears a mask and washes her hands after every sale if she has been handling money. I’ve not seen any other Thai do that.
